Meadows, woodland edges, hedgerows

Season:
April – June (young shoots)

Identification:
Large, hairy leaves and hollow stems. Much smaller than Giant Hogweed.

Edible Parts:
Young shoots and stems (peeled)

Uses:
Steamed, sautéed, pickled shoots

Lookalikes & Cautions:
Never confuse with Giant Hogweed (Heracleum mantegazzianum) — extremely dangerous. Learn with an expert.

Ethical Notes:
Harvest only young growth and only when fully confident.
